As a result, the cooking methods of two ancient delicacies were inadvertently recorded, making everyone realize that porridge-based hotpot and kong rice had already existed as early as the Song Dynasty.

The preparation of the porridge hotpot soup is actually quite particular. Special fragrant rice is used, which is gently pounded to break each grain into two or three petals, then rinsed, mixed with oil and salt, marinated for a while, and then cooked in a large clay pot. When the porridge is cooked until the water and rice are blended, the porridge water boils and forms a chrysanthemum shape, with layers turning out from the inside. At this time, the porridge water scooped from the center of the flower is called "porridge clear", which is the essence of the porridge.

It is sweet, soft and smooth like soup when you take a bite. This soup, which only shows pulp but not rice, can be used to blanch meat and vegetables. It is the authentic hotpot with porridge base.

Putting the tender meat slices directly into the porridge base pot has a self-sealing effect, and the blanched meat is easy to keep fresh and tender.
