The Coffee Shop in a Different World Station
28 Christmas Day and First Cake Making (2/3 Pt)
The day before the Posada party at my school, Takumi and Nyarch and Luna appeared in the kitchen of the coffee shop "Tsubame", which was closed.
He wrapped around his waist a slightly larger cafe apron borrowed from Nyarch, and Luna lined the kitchen table with ingredients and cooking tools.
Since the day I decided to make a cake with Takumi, I have been allowed to practice several times. There were some failures, but if Takumi had proceeded with caution, he would have been able to make a properly delicious cake.
But what we make today is not for ourselves, but for everyone at school to eat.
Would you be able to make the cake properly by fulfilling it......, Luna's heart giving a hard look in front of the “production" was so beating that she thought she might be hearing it around her.
Takumi speaks with her usual glittering expression to Luna, who is softening the kitchen table in front of her.
"We did it right up until yesterday, so if you proceed with the work carefully one by one, you'll be fine. Besides, it's still early, and if you fail, you just have to start over."
"It is! If you fail, all you have to do is snuff in your stomach!
Following Takumi, Nyarch also sends Yale at his usual rate.
To the two words, Luna was able to regain only a little calm.
"That's right. If you do what you're taught, it's gonna work."
"Yeah, let's do our best. So let's get started."
Using Takumi's voice as a signal, “real” cake making began.
Nyarch, who admits to being a "eater," does not join cake making. We moved to a small table in the corner of the kitchen to keep an eye on the two of them working.
On the kitchen table, essential ingredients for cake making were already available. There are two types of powders used as powders: Arrose (Comte) powder and Myce (Corn) powder. Fresh eggs and basic ingredients such as milk, butter, sugar and salt are also arranged together.
And the essential ingredient in today's cake is the corned brown powder in the bottle - the powder of the cocoa beans.
Cocao, the main ingredient for cocoa and chocolate, is one of the most beloved ingredients in this world.
In this world, cocoa martha (cocoa mass), a paste filled with roasted cocoa beans, is dissolved in hot water and warmed milk and is a drink.
The cocoa flour is made by removing excess fat from this cocoa marsa and finely crushing it, with the characteristic that it has less acidity than the cocoa marsa and is easily soluble in hot water and milk. It is also highly conservative, an ingredient that has gradually shown signs of popularity here lately.
In this world, cocoa powder, a new ingredient that has just begun to emerge, is very familiar to Takumi. In other words, cocoa powder is the exact same type of cocoa powder that contains no sugar, powdered milk, or the like that was called pure cocoa.
Rather, it could be said to be a more tame ingredient for Takumi than for Cacao Martha.
Takumi was trying to get Luna to get as much work going as she could with today's cake making. Make sure all the ingredients are in place and speak up.
"Now, let's start with fabric making the foundation quickly. Do you remember the first step?
"Yes, by properly measuring the ingredients used in the fabric"
"Right. It is important to measure the quantity properly, especially for things like cakes and baked confectionery. Don't forget if you start making your own from now on. Let's start with the powder."
Takumi's words, Luna held on hand a cup and spoon for the metering she had prepared, a bowl large and small to add the measured ingredients to it.
"Eh, you can put the arrow flour and the mice flour in the same bowl, right?
"Yeah, I'll use this one to match, so that's okay. You can also add cocoa powder for the dough."
"I get it!
Weigh each ingredient as you check with Takumi one at a time. The look on Luna's face as she carefully proceeds with the work, although there is still some ambiguity in the hand.
A large bowl is served with arrow flour and mace flour, as well as cocoa flour, while another bowl is served with plenty of sugar. The milk and butter were put together in a small bowl.
"Yes, you're fine. Now let's make meringues. Since it's a corner, why don't you also crack the eggs?
"Ha, ha. Eh, white and yellow are put in separate bowls...... I'll try my best."
A color of tension appears on Luna's expression in Takumi's words. Breaking eggs is one of Luna's worst things.
During the practice, I was too powerful to strike and crush it all the time, or hurt the yellow inside and mixed white and yellow.
Still, I was able to manage if I just cracked the eggs of what had been while making repeated failures.
But it's hard to get from here. In this case of cake making, it is also required to separate “white” from “yellow” instead of just breaking the shell.
Takumi taught me how to split the egg shell clean in half and leave only yellow in the shell while alternating between the halved shells. But it was hard to crack the egg shell clean first, and even if it worked, it was very hard to flush only the white body down into a bowl that was undergoing it so as not to lose its yellow body.
Takumi seemed like a very difficult divine business for Luna, although she was going with a familiar hand.
Still, if you don't try, it won't work. Let me just do one first, and if I fail, let Takumi do the rest......
Finally, determined, Luna takes one prepared fresh egg and beats it to the concon and kitchen table.
(Try to turn it around, Concon and...)
When I hit the side of the egg with a cone, there was a crack in the hard shell and a small dent formed. From there, gently beat the eggs with the concoction while turning them slightly, spreading the crackle. Eventually, a single muscle stretched nicely from the recessed area.
Where the crackling muscles circle, Luna gently pinches the egg shell with both hands. And when I gently opened the shell so that the round bottom was lower, the overflowing white body poured sully down my hand from inside.
(From here, carefully…)
Transfer the remaining white body around the yellow body to the empty shell in order to drop it into the bowl. But you got nervous and your hands shook, and not just your white body, but your yellow body fell into the bowl with you.
"Ah!"
Luna's short scream echoes in the kitchen. In the bowl, a round yellow body floated with pocan in a clear white body.
I knew it wouldn't work...... I'm sorry I wasted the ingredients, and Luna's eyes get all moist.
Then Takumi, who was watching Luna's work, took the bowl where the yellow body got in with him.
As Luna stares at what she's going to do, Takumi gently puts a dry tablespoon of weighing spoon in the bowl and lifts it up a bit.
And when Takumi lifts the spoon, the one on top is the yellow egg that should have fallen in the bowl earlier. Oh, my God, only the yellow body of the egg had been removed nicely and quickly, as if it could be perfectly accommodated by a weighing spoon.
Luna is decent as if she's watching the magic trick. Tears that were about to overflow pulled me in unexpectedly.
Takumi spoke gently to Luna, staring at her with her eyes twitching.
"Actually, the other day I taught Roland the same way to divide white from yellow, but he tends to fail, doesn't he? Luna was having a hard time, and when there was no easier way to do it, I tried everything, and this is how I found it to be clean with a weighing spoon. Wouldn't this be easier to do because you can crack an egg and then yellow yourself?
"Ha, ha! You mean if the eggs crack without crushing the yellow, you'll be fine, right?
Takumi nods and responds to Luna's words.
The task of separating whites and yellows, which was the hardest for me, Luna took a whopping breath when she found it easy to do this.
"Then let's continue. If Mr. Luna cracks it, I'll be the yellow one. If there's a shard of shell in it, it's okay."
"Thank you. Thank you. Then I'll keep doing it!
The tension eased Luna went smoothly through the work that followed. When you split one egg into the bowl to avoid breaking the yellow, have Takumi remove the yellow and transfer the white to another bowl as well.
Repeating this task several times, Luna was able to prepare the required amount of eggs without even making a single failure.
Finishing the most troubled task without fail, Luna's expression adds brightness. But much remains to be done. Takumi asked the point of the next task to redirect consciousness to work.
"You're making meringues next. What were you going to do?
"The meringue was warm, the cream was stubborn... right?
"Exactly. Then I will prepare hot water for you, so Luna will ask you to prepare the foam."
Yes, sir.
Takumi, prepared with a large bowl, pumps only a little cold water into it before pouring the pre-boiled water. Touch the bottom of the bowl to make sure it's warm.
Where the temperature is just better than the bath, bring the bowl with hot water to the kitchen table and float the bowl with the white egg in it.
Wait for Takumi to hold the white-covered bowl floating in hot water against flipping over before Luna puts the hand-turned foam into the bowl.
Wait for Takumi's signal, the handle is turned. Along with the sound of karakara, the whipper part of the foam rolled around.
While Luna turns the handle, Takumi slowly rotates the white-covered bowl to prevent mixing unevenness. Then he turned the figure into a fluffy white foam as the white body, which was a clear liquid, wandered.
Where the corners have been well foamed to the point where they are lifted, the sugar just measured can be added in triplicate.
To Luna, who kept spinning the steering wheel hard, Takumi signaled to stop her hand in anticipation of the time. As Luna, who received the signal, stopped her hand and slowly lifted the foam, the meticulously foamed meringue slowly cornered her. Excellent finish.
Takumi nods with a grinning look and speaks to Luna.
"That sounds good. Let's keep finishing the fabric."
"In the order of egg yolks, powder, milk and butter, you make sure to fold them up big and mix them up!
"Exactly. Now let's move quickly from the yolk."
Saying so, Takumi gently melted and mixed the separated egg yolks with vegetable chopsticks before gently pouring them into the meringue. Stir loudly as Souma Luna lifts the meringue in the bowl from the bottom with a thin wooden slab, and let the egg yolks soak.
While Luna was mixing egg yolks, Takumi went on to the next task.
Sift off the arrow flour, the mice flour, and the cocoa flour, which were kept together during weighing, into another bowl while passing through a fine eyed monkey. He was carefully sifted while also trying to crush cocoa powder that was liable to become damp.
Once the sieve is finished, it is now returned to the original bowl while passing through the same monkey. The purpose is to mix the whole thing together by shaking it carefully and allow the powder to contain air.
"That's about it, right?
A second sieve was just at the end of the day, when Luna called me. The meringue is cream-colored in its entirety and the yolks are unquenched and combined. Doesn't seem like a problem.
"Yeah, and then you add the powder."
Takumi drops only half the amount of powder he sieved earlier into the meringue dough while passing the monkey through again.
Just as at the time of the yolk, Luna let the powder soak up the whole thing while making sure the dough was folded large.
After matching the other half in the same way where it is somewhat tame, also combine the milk and melted butter warmed in a hot sauce to make it look good.
Eventually, the whole thing turned out to be a pale, cocoa-dyed fabric.
"This looks like a good fabric. All you have to do is bake it up, but I'll use this one today."
"What? This doesn't have a bottom, does it? Where do you put the dough?
I saw the appliance Takumi took out, but Luna asks a strange question.
Previously, prototypes were made of smaller sizes, so the square frying pan used to make egg grills was used for baking.
But what we make today for production is going to need bigger fabrics than anything we've ever prototyped. Then the frying pan I've been using isn't big enough.
So Takumi asked Gustav to make a large square circle.
I just don't see a bottom plate in this circle. It was inevitable that Luna, the first to see this apparatus, would question it.
To Luna with her neck hanging, Takumi smiles and returns her words.
"It will certainly be used in a different way than previous frying pans. But I think as soon as you see where to use it, you'll understand. Now, can I have the butter painted inside this circle?
"Ha, ha!
As Takumi told me, Luna paints the inside of the received circle with butter. Then, as he moved forward in front of the oven stove, he also applied butter directly over the already warmed ceiling as directed by Takumi.
"I'll do this circle when I'm done applying butter"
Takumi said so, placing a circle over the top plate where the butter was painted. When I saw that, I finally understood how to use Cercle, Luna, okay! And raise your voice.
"Damn, I'm turning the top plate into a frying pan!
To Luna's cheerful voice, Takumi nodded one.
"That's what happened. If you replace the top plate directly with a frying pan, you can properly cook the large dough. It's usually a top plate that is often cooked with a pan or frying pan set aside, but this is how it is supposed to be used directly for cooking. However, once you've used the oven from time to time, you'll have to polish it properly."
"If you don't keep it clean, you can't make it yummy."
"Exactly. Now, are you sure you want to pour the dough inside this mould?
"Yes!
A cheerful voice rose from Luna's mouth.
Luna, with the ladle in her hand, pours the bowl dough gently towards the center of the circle. The slightly whitish cocoa-colored fabric spread quietly into the circle.
Heat is applied from the warmed ceiling to the fabric carefully poured down to the corner to prevent unevenness in height.
Takumi, with a lid on top of the cercle, flipped the little hourglass she had at hand.
For a while the dough is slowly made to steam. And the lid was slowly removed by Takumi's hand, which confirmed that the sand had fallen off.
"Wow! Smells good!
The scent of a fluffy raised cocoa tickles Luna's nostrils.
The dough poured into thin eyes was doubly inflated in height by being carefully steamed. The fabric is starting to dry around. Just about to flip it is the right sign.
"But the dough is full up to the edge, but how do I flip it?
Luna asks Takumi about the procedure after this. Sure, there's no gap to put in a flyback as it is, and unlike a frying pan, you can't lift the top plate.
Takumi replied with a gentle smile to such a simple question of Luna.
"The edges are already solidified, so you just have to do this."
Takumi gently lifts the circle as she wraps a cloth around her hand to avoid burns. Thanks to the butter applied in advance, the dough was removed from the circle without collapsing.
"Oh my God! The edges are solidified, so it's okay if you don't have a mold."
"Exactly. Well, I'm waiting for the last piece of fabric making. It's a little big, but good luck flipping it"
"Ha!"
Receiving two large fly returns from Takumi, Luna became a serious look in front of the oven stove.
If you don't panic and calm him down, you'll be fine - close your eyelids for a moment and tell him inside you, then Luna gently slides the fly back under the fabric.
Slowly lifting as it was, the fabric was turned upside down in momentum. Seems to have succeeded safely, without breaking down. The dough returned to the table had been cooked unnecessarily clean without burning.
You can return the dough well, Luna staring at Takumi with a full grin. Takumi also called out to Luna, smiling back.
"You were able to give it back well. The back side is fine as long as you have lightly baked eyes. At this rate, cook up the rest of the dough."
"Yes. I'll do the rest!
Luna's response with small successes is full of confidence.
At that time, Nyarch, who until then had watched quietly, raised his voice with a slightly unfortunate tone.
"Heh heh heh heh heh heh heh heh heh heh heh heh my turn is apparently not...... I'm sorry, but that's fine!
The two of them accidentally spill couscous and grin at the tediously swallowing remarks they have been waiting for. Luna, who received the word as a unique rhetorical cheer, returned the word to Nyarch.
"I'll do my best to make sure you eat properly successful, so just wait a little longer!
The work at this stage was then completed once the remaining dough had also been cooked in turn.
The final finish is due tomorrow morning. Luna gently wrapped the hard-baked dough in a cloth so as not to damage it, once again inflating her image in her head as to what ornament to wear.
